Steps
- Butter the *bread*, not the pan — every spot of crust the butter misses is a pale spot on the sandwich.
- Build the sandwiches and set them in a cold nonstick pan, then turn the heat to medium-low. Starting cold gives the cheese a head start on melting.
- Cook 3–4 minutes a side, pressing gently, until deep golden. If the bread browns before the cheese melts, the heat is too high — that's the entire secret.
- Rest one minute before cutting so the cheese sets from lava to pull.
Best cheese for melting?
