Steps
- Get the oil properly hot and add the beans in as close to one layer as you can. Let them sit and blister before you stir.
- Toss every minute or so for 5–6 minutes with a splash of water near the end — the steam finishes the insides while the pan keeps the char.
- Garlic in for the last 90 seconds so it toasts without burning.
- Salt, chili flakes, lemon. Serve hot or room temperature.
