Pico de gallo

93

Chopped tomato, onion, chilli, lime and coriander. Fifteen minutes, no cooking, and one of the highest scores on this entire site — it is essentially vegetables and citrus, and it makes everything it touches taste like more.

Ingredients

Every ingredient links to its food page — same data, same score, same formula.

Steps

  1. Seed the tomatoes — the jelly is what makes pico watery an hour later.
  2. Dice everything small and roughly the same size so each spoonful gets all of it.
  3. Toss with the lime juice and salt and leave 10 minutes for the onion to soften and the salt to draw the flavours together.
  4. Best within a few hours. Drain off any liquid that collects before serving.

Why this score

a satiety booster

Exceptional fullness per calorie — but at only 21 kcal per 100 g, it can't fill you up on its own. Its power is making a meal bigger and more filling at almost no calorie cost; pair it with protein.

How scores work

Computed on the finished dish, not an average of the parts: 148 kcal goes into the pot, 688 g of ingredients comes out as ~688 g of food → 21 kcal per 100 g. Cooking moves water, and energy density is the score's biggest lever — so we show the math. Full formula here.
