Steps
- Separate the onion slices into rings and toss them with the egg white until every ring is slicked — use your hands, a spoon won't get there.
- Mix the parmesan, paprika, garlic powder, pepper and salt, and toss the rings through it.
- Air-fry at 180°C (350°F) in a single layer, 12–15 minutes, shaking twice. Crowd the basket and they steam instead of crisping, so work in batches.
- They crisp fully as they cool — give them five minutes on a rack before deciding they aren't done.
No air fryer?
Oven at 200°C (400°F) on a rack over a tray, 20–25 minutes. Slightly less shattering, same idea.
