- 2 cups cottage cheese500 g
- 1 cup cheddar cheese, shredded100 g
- 1 poblano poblano pepper, seeded and diced100 g
- 1 small jalapeño, seeded and minced20 g
- 2 cloves garlic, minced6 g
- 1 1/2 tsp ground cumin3 g
- 2 tsp chili powder4 g
- juice of 1/2 lime15 g

Steps
- Blend the cottage cheese completely smooth — a full minute. Any curd left will look like a split sauce once it's warm.
- Soften the poblano, jalapeño and garlic in a dry non-stick pan over medium heat, 4–5 minutes, then stir in the cumin and chilli powder for 30 seconds.
- Turn the heat to low, add the blended cottage cheese and the cheddar, and stir until the cheddar melts. Keep it below a simmer — boiling makes it grainy.
- Finish with the lime and salt. Serve warm with pepper strips, cucumber or chips; it thickens as it cools and loosens again with a splash of milk.
Will it taste like cottage cheese?
Blended and warm with cheddar and spice in it, no. What survives is the tang, which is what evaporated milk versions are missing anyway.
