- 1 lb top sirloin steak, frozen 30 min, shaved paper-thin500 g

Steps
- Half-freeze the beef so your knife can shave it into curls — thin is the whole technique.
- Cook the onions (and pepper, if using) in half the oil low and slow until deep gold, 10 minutes. Set aside.
- Sear the shaved beef in a screaming pan with the rest of the oil, seasoning as it browns, 2–3 minutes, then fold the onions back in.
- Divide into four piles, lay provolone over each, lid on for 30 seconds to melt, and scoop each pile whole into its roll.
