Steps
- Blend the soaked anchos with half the pineapple, the vinegar, garlic, cumin, oregano and salt. Marinate the sliced chicken 30 minutes to overnight.
- Sear in a ripping-hot pan in batches — you want char, and a crowded pan gives you stew.
- Warm the tortillas in the same pan to pick up the fond.
- Build: chicken, diced pineapple, onion, cilantro, hard squeeze of lime. The pineapple isn't a gimmick — the acid is what makes al pastor taste like al pastor.
