Steps

  1. Heat the oven to 200°C (400°F). Whisk the flour, sugar, baking powder and salt together.
  2. Rub or cut the cold butter into the flour until the largest pieces are pea-sized. Those pieces are what make the layers — melted butter makes a cake.
  3. Whisk the cream, egg and vanilla, pour into the dry mix and fold just until it comes together, then fold in the blueberries with two or three strokes.
  4. Pat into a 20 cm (8-inch) round about 3 cm (1¼ inches) thick and cut into 8 wedges. Chill them on the tray for 10 minutes if the kitchen is warm.
  5. Bake 18–22 minutes until the tops are golden and the edges are set. Eat the day they are made.
