Steps
- Cover the eggs with cold water, bring to a boil, take the pan off the heat and lid it for 11 minutes. Then straight into iced water — the shock is what stops the grey ring and makes them peel.
- Peel, halve lengthways, and pop the yolks into a bowl.
- Mash the yolks completely smooth with the mayonnaise, yogurt, mustard, vinegar and salt. Half yogurt is the modern build — it keeps the filling light and slightly tangy without reading as diet food.
- Spoon or pipe back into the whites and dust with paprika. They keep a day in the fridge; fill just before serving if you make them ahead.
Older or fresher eggs?
Older. A week-old egg peels cleanly where a farm-fresh one tears, because the membrane loosens as the egg ages. It's the only ingredient where less fresh is better.
