Blended fruit and Greek yogurt, frozen on a stick — the freezer dessert that costs almost nothing in calories and still tastes like a treat. Whole strawberries rather than juice is the whole point: the fibre and the water are what you are eating.

Steps

  1. Blend the strawberries with the honey, lemon and vanilla until smooth.
  2. Add the yogurt and pulse just to combine — blending it hard thins the yogurt and the pops come out icier.
  3. Pour into 8 moulds, leaving a centimetre at the top for expansion, and insert the sticks.
  4. Freeze at least 5 hours, or overnight. To unmould, run the outside under warm water for 10 seconds.

Why are mine rock hard?

Fat and sugar keep ice crystals small, and this mix is low in both. Whole-milk yogurt rather than nonfat helps, and so does letting them stand 3–4 minutes before eating.

Frozen strawberries?

Fine, and often better in winter. Thaw them first or the blender will not catch them.
