Tiramisu with thick Greek yogurt where the mascarpone usually goes: the coffee, the cocoa and the soaked sponge all survive intact, and a portion carries about 20 g of protein. One of the few desserts that is genuinely filling rather than merely sweet.

- 3 cups whole-milk Greek yogurt750 g
- 3 tbsp honey60 g
- 1 tsp vanilla extract5 g

Steps
- Whisk the yogurt with the honey and vanilla until glossy and thick. Don't over-whisk — Greek yogurt thins if you beat it hard.
- Dip each ladyfinger in the cooled espresso for about a second a side. Any longer and the layer collapses; they keep drinking while they sit.
- Lay half the soaked fingers in a dish, spread over half the yogurt, then repeat. Smooth the top.
- Chill at least 4 hours, ideally overnight — the sponge has to soften into the cream. Dust with cocoa and shave over the chocolate just before serving, not before chilling, or the cocoa goes damp.
Is this really tiramisu?
It's tiramisu built on yogurt rather than mascarpone and raw egg, so it's tangier and lighter, and it sets softer. If you want the classic, make the classic — this is the version you can eat on a Tuesday.
