Chocolate cottage cheese mousse

Chocolate cottage cheese mousse

50

The second act of cottage cheese's dessert era: blended with cocoa and melted dark chocolate until it turns into a dense, glossy mousse. Nobody guesses the base — they just notice it holds you like dessert rarely does.

Both directions are legitimate — the score measures fullness per calorie, not virtue. Every version is the same dish, rebalanced.

Ingredients

Every ingredient links to its food page — same data, same score, same formula.

Steps

  1. Blend the cottage cheese, cocoa, honey, vanilla, and salt until completely smooth — scrape down the sides once; graininess means keep going.
  2. With the blender running, pour in the melted chocolate. It tightens the mousse and deepens the flavor.
  3. Divide into four glasses and chill at least 1 hour — it sets firmer and tastes more like mousse cold.
  4. Optional: a few berries or a shave of dark chocolate on top.

Why both cocoa and melted chocolate?

Cocoa brings the deep chocolate flavor almost calorie-free; the melted chocolate brings texture and shine. All-chocolate versions taste similar but roughly double the calorie cost per serving.

Computed on the finished dish, not an average of the parts: 930 kcal goes into the pot, 576 g of ingredients comes out as ~575 g of food → 162kcal per 100 g. Cooking moves water, and energy density is the score's biggest lever — so we show the math. Full formula here.
