Steps
- Blend everything until smooth, then let the batter sit 5 minutes — the oats need it to thicken.
- Cook small pancakes (small flip easier; these are more delicate than flour ones) in a buttered nonstick over medium-low.
- Flip when bubbles set at the edges, about 2 minutes, then 1 minute more.
- Eat as they come — banana pancakes are best 30 seconds old.
Why do mine fall apart?
Size and heat. Keep them under 10 cm (4 inches) across and the flip survives; go dinner-plate size and there's no flour holding it together. Medium-low heat gives the middle time to set before the outside darkens.
