Steps
- Shred the phyllo into short threads and toast it in the butter over medium heat, stirring constantly, 5–8 minutes, until deep golden and properly crisp. Undertoasted pastry goes soft the moment it meets the pistachio.
- Blitz the pistachios to a loose paste, then stir in the toasted pastry and the salt.
- Hollow the strawberries slightly with the tip of a knife and pack the filling in.
- Spoon or drizzle the melted chocolate over the top and let it set for 10 minutes. Eat the same day — the pastry softens overnight.
