  1. Sauté the pepper and onion in half the butter until soft, wilt in the spinach, and set the vegetables aside.
  2. Whisk the eggs with the salt. Melt the rest of the butter over medium, pour in the eggs, and pull the set edges toward the middle while tilting the runny egg outward.
  3. When the top is nearly set, lay the vegetables and cheese over one half.
  4. Fold, slide onto the plate, and eat while the cheese is still molten.
