Steps
- Sear the beef strips hard in half the butter, 1 minute a side, and set aside — they finish later, and overcooked sirloin is the classic stroganoff failure.
- In the same pan, brown the mushrooms in the rest of the butter until their water is gone, then soften the onion and garlic.
- Stir in the flour, cook a minute, and whisk in the broth, worcestershire and dijon. Simmer to a gravy.
- Off the heat, stir in the sour cream — boiled sour cream curdles — then the beef and its juices. Serve over the noodles.
