Steps
- Heat the oven to 200°C with a buttered 20 cm (8-inch) cast-iron skillet or square pan inside — batter hitting a hot pan is where the crust comes from.
- Whisk dry and wet separately, then fold together until just combined.
- Pour into the hot pan (it should sizzle) and bake 20–25 minutes until golden and a toothpick comes out clean.
- Cool 10 minutes in the pan. Cut into squares and argue about the sugar like everyone else.
