Steps
- Warm the oil, half the butter and the garlic together over medium — starting the garlic in cold fat toasts it evenly instead of scorching it.
- When the garlic is pale gold, add the shrimp, salt and pepper flakes. Cook about 1 minute a side, until just pink, and remove.
- Pour in the wine, boil 2 minutes to burn off the alcohol and reduce, then swirl in the rest of the butter and the lemon.
- Return the shrimp, toss with the pasta, a splash of pasta water and the parsley. Serve immediately — scampi doesn't wait.
