Ingredients
- 3 lb country-style ribs pork ribs1400 g
Rub
- 3 tbsp brown sugar40 g
- 2 tbsp paprika12 g
- 2 tsp garlic powder6 g
- 2 tsp onion powder6 g

Glaze
- 1/2 cup barbecue sauce120 g

Steps
- Mix the rub and coat the ribs everywhere. Rest 30 minutes (or overnight in the fridge).
- Wrap tightly in foil, meat side up, and bake at 150°C for 2 1/2 to 3 hours. The foil is the smoker substitute: it traps steam and does the collagen work.
- Unwrap, pour off the liquid, brush with barbecue sauce.
- Broil or bake at 230°C for 8–10 minutes until the glaze bubbles and chars at the edges. Rest 10 minutes; cut between the bones.
