Biscuits and gravy
The South's Sunday heavyweight: tall buttermilk biscuits split under peppery sausage cream gravy. Unapologetic, and now unambiguous about what it costs.

Steps
- Grate the frozen butter into the dry ingredients, toss, then stir in the cold buttermilk until shaggy. Cold fat + hot oven = the steam that lifts biscuits.
- Pat to 2.5 cm (1 inch), fold in thirds twice (that's the layers), cut 6 rounds pressing straight down — twisting seals the edges shut.
- Bake at 220°C for 12–14 minutes to golden.
- Gravy: brown the sausage, leave the fat, stir in the flour for a minute, then whisk in the milk until thick. Pepper hard. Split, smother, surrender.

What pulls it down
Computed on the finished dish, not an average of the parts: 3587 kcal goes into the pot, 1647 g of ingredients comes out as ~1250 g of food → 287 kcal per 100 g. Cooking moves water, and energy density is the score's biggest lever — so we show the math. Full formula here.
