  1. Rub the frozen grated butter into the flour, baking powder and salt, then stir in the yogurt to a shaggy dough. Yogurt does what buttermilk does here, with more protein.
  2. Pat to 2.5 cm (1 inch), cut 6 rounds, bake at 220°C for 12–14 minutes.
  3. Brown the turkey sausage in the oil — lean sausage renders little fat, so the oil is doing the roux's job.
  4. Stir in the flour, cook a minute, whisk in the milk and simmer to gravy. Pepper hard: this gravy needs more than a pork one does.
