Steps
- Brown the thighs in the butter, remove, and soften the onion, carrot and celery in the drippings.
- Flour in for a minute, then whisk in the broth. Chicken back in; simmer 20 minutes, then shred it into the pot with the peas, thyme, salt and pepper.
- Dumplings: rub the cold butter into the dry ingredients, stir in the milk until it *just* comes together. Overmixed dumplings are sinkers.
- Drop spoonfuls onto the simmering stew, lid ON for 15 minutes and no peeking — dumplings steam, and every peek lets the steam go.
