  1. Melt the butter in a deep skillet and soften the onion, carrot and celery, about 8 minutes.
  2. Stir in the flour and cook 2 minutes, then whisk in the broth and milk. Simmer until it thickens into gravy.
  3. Add the chicken, peas, thyme, salt and pepper; simmer 5 minutes and tip everything into a baking dish.
  4. Lay the crust over, crimp to the edges, cut three vents, and bake at 200°C until deep golden, 30–35 minutes. Rest 10 minutes — the filling is lava.
