  1. Whisk the eggs, milk, vanilla, cinnamon and salt in a wide dish.
  2. Soak each slice about 20 seconds a side. Day-old bread drinks properly; fresh bread turns to mush, which is the whole reason recipes ask for stale.
  3. Fry in butter over medium heat, 2–3 minutes a side, until deep gold and set in the middle. Medium, not high — too hot and the custard is raw inside a burnt crust.
  4. Serve with the strawberries and syrup.
