Both directions are legitimate — the score measures fullness per calorie, not virtue. Every version is the same dish, rebalanced.
Ingredients
- 7 thighs chicken thigh700 g
- 1 tbsp canola oil15 g
- 3/4 tsp salt4 g
- 1/2 tsp black pepper1 g
Glaze
- 3 tbsp honey60 g
- 5 cloves garlic, minced20 g
- 3 tbsp soy sauce45 g
- 4 tsp apple cider vinegar20 g
- 1/4 cup water60 g
- 2 green onion, sliced15 g
Every ingredient links to its food page — same data, same score, same formula.
Steps
- Season the thighs and sear them in the oil, 5–6 minutes a side, until deeply golden. Remove.
- Lower the heat, cook the garlic 30 seconds, then add the honey, soy, vinegar and water.
- Simmer to a syrup, 3–4 minutes, then return the chicken and turn it in the glaze until coated.
- Scallions on top. Rice or greens underneath; the glaze wants something to land on.
Why this score
solidly fillingNo single route carries this one — a moderate amount of protein, volume and fiber.
Three routes to fullness — one is enough
What pulls it down
Computed on the finished dish, not an average of the parts: 1319 kcal goes into the pot, 940 g of ingredients comes out as ~800 g of food → 165 kcal per 100 g. Cooking moves water, and energy density is the score's biggest lever — so we show the math. Full formula here.
