Steps
- Blind-bake the crust: lined with paper and weights, 190°C for 15 minutes, then 5 more uncovered. Skip this and the bottom is raw.
- Scatter the bacon, onion and cheese over the base.
- Whisk the eggs, cream, milk and seasonings and pour over — the custard should reach just below the rim.
- Bake at 175°C for 30–35 minutes until set with a faint wobble at the centre. Cool 20 minutes before cutting.
