Steps
- Cream the butter and sugar until pale and fluffy, then beat in the eggs and vanilla.
- Fold in the flour, baking soda and salt — plus 1 1/2 tsp cream of tartar if you have it; that acid is the classic snickerdoodle tang.
- Roll 24 balls, roll each in the cinnamon sugar, and space them well on trays.
- Bake at 175°C for 9–11 minutes until the edges are set and the middles still look underdone. They finish on the tray — that's the soft centre.
