Shrimp fried rice
Day-old rice, shrimp, egg and peas in a very hot pan. Shrimp is the seafood Americans eat most and fried rice is where a lot of it goes — and with the oil kept to a tablespoon this is a far better-scoring plate than takeaway versions suggest.

Steps
- Cold day-old rice is not a suggestion — fresh rice steams and clumps. If you only have fresh, spread it on a tray and freeze it for 20 minutes.
- Get the pan very hot. Scramble the eggs in half the oil, break them up, and tip them out.
- Add the rest of the oil, then the shrimp, and cook 2 minutes until just pink. Add the carrot, garlic and peas for 2 minutes more.
- Add the rice, press it flat and leave it alone for a minute at a time so it toasts rather than stirs. Return the egg, add the soy sauce, sesame oil and green onion, toss once and serve.
