Teriyaki chicken
The takeout standard from scratch: chicken thighs glazed in a four-ingredient sauce you can actually pronounce, over rice. Sweeter than you think — that's the honest part.

Steps
- Sear the chicken in the oil until golden on all sides and just cooked through.
- Stir the sauce ingredients together (cornstarch into the cold water first), pour into the pan, and simmer 2 minutes until it turns to glaze and coats the chicken.
- Serve over rice, under the scallions and sesame.
Why thighs and not breast?
Thighs stay juicy through the double heat of sear plus glaze; breast overshoots in the time the sauce needs. If you use breast anyway, pull it early and let the glaze finish alone — the swap shows what it does to the score.

What pulls it down
Computed on the finished dish, not an average of the parts: 2023 kcal goes into the pot, 1486 g of ingredients comes out as ~1150 g of food → 176 kcal per 100 g. Cooking moves water, and energy density is the score's biggest lever — so we show the math. Full formula here.
