Steps
- Make the sauce: fry the flour and spices in the oil for a minute, whisk in the tomato paste, then the broth. Simmer 5 minutes to a pourable gravy — congratulations, you've out-cooked every canned enchilada sauce.
- Toss the shredded chicken with the onion and a ladle of sauce.
- Soften the tortillas (10 seconds each in a dry hot pan), fill, roll, and pack seam-down in a sauced baking dish.
