Steps

  1. Press the crumb base into a 23 cm (9-inch) springform and bake 10 minutes at 175°C.
  2. Blend the yogurt, cottage cheese and cream cheese completely smooth — this is the step that decides whether it reads as cheesecake or as baked yogurt.
  3. Beat in the sugar, then the eggs one at a time on low, then the cornstarch, vanilla and lemon. The cornstarch matters more here than in a classic: yogurt weeps without it.
  4. Bake at 160°C for 50–55 minutes until the edge is set and the middle wobbles. Oven off, door ajar, one hour; then chill overnight.
